Paneer /Indian cottage cheese Salad with tomatoes, cucumber and corn in 10 minutes
Paneer or Indian cottage cheese salad is very easy to make specially when you are in great hurry or very tired after a long day work and don't wanna cook. This is  actually assembling few things together and you are ready to eat. In most of the Indian house Paneer is made in home only. For this recipe also I would prefer home made Paneer but store bought Paneer is also fine. You need to defrost store bought Paneer.

Ingredients:
Indian cottage cheese/ Paneer 1/2 cup (cubed)
Ripe tomatoes 2 cut length wise.
Cucumber 1. 
Boiled corn 1/4 cup.
Black pepper 1/2 teaspoon.
Fresh lime juice.
Olive oil 1 teaspoon.
Salt to taste.

Method:

If using store bought paneer then defrost and cut in cubes. Keep aside. 

OR

If store bought Paneer, then soak it in hot water for 2-3 minutes, squeeze and take it out.Keep aside.

Cut the tomatoes.Cut the cucumber in slices. 

Boil the corn and let it cool. 

Now in a large mixing bowl put the tomatoes, cucumber, corn and sprinkle with olive oil, black pepper, lime juice and salt. Mix well. 

Now add the paneer/ Indian cottage cheese and toss. 

Garnish with fresh coriander and serve.
