Aloo Bonda recipe:
Cuisine:- Indian
Serves:- 3 to 4
Ingredients:-
3 medium sized potatoes
1 small onion finely chopped
1/4 tsp of turmeric powder
1 1/2 tbsps. oil
few curry leaves chopped
1/4 tsp of mustard seeds
1/2 tsp of grated ginger
1/2 tsp of jeera
2 to 3 green chillies chopped
1/4 coriander powder

Lemon juice
A pinch of crushed fennel seeds
Salt to taste
For outer covering
1 cup besan
2 tbsp rice flour (add more if needed)
Salt to taste
1 pinch of turmeric powder
Oil for deep frying
Method:-
Start with boiling the potatoes.
After boiling let the potatoes cool.
In the meantime add oil to a hot pan. Add mustard seeds and jeera.
When they start spluttering, add ginger, sauté for few minutes and then add the chopped onions, salt, curry leaves and green chillies.
When the onion starts changing color add the spice powders.
Add potatoes and mash them. Mix well and add lemon juice.
Cool the mixture and make small round balls. Keep aside.
Time to make the batter for outer cover.
Add all the ingredients and water to make the batter.
It must be thick to coat the bonda.
Heat oil in a deep frying pan.
When the oil is hot enough dip each ball in the batter and drop in the hot oil.
Fry for 3 to 4 minutes or till they are golden.
Repeat until the all the balls are done.
Serve Aloo bonda hot with Tomato sauce or homemade green chutney.
Wait for my forthcoming post of home made delicious green chutney.
