Chick Pea Salad
This healthy chickpea salad is the perfect side dish for dinner or lunch. You can take this healthy salad for tiffin( in office). I made this salad with boiled chickpeas, cherry tomatoes, onion and cucumber but you can also add beetroot and roasted pumpkin. In my family everybody is fond of salad so I keep trying different types of easy and fresh salads. I try to keep the dressing very simple. I normally eat salad for lunch. Chick Pea Salad |
Serves 3 to 4 persons
Ingredients:
1/2 cup boiled chickpeas
1 medium size cucumber( make small pieces)
1 medium size red onion( make small pieces)
6 to 7 cherry tomatoes ( make them half)
Coriander and Mint leaves( a handful of them washed)
For dressing
3 to 4 teaspoon extra virgin olive oil
Freshly ground black pepper
3 tablespoon of lemon juice
Salt to taste
Method:
Boil the chickpeas in pressure cooker with enough water.
In the mean time cut cucumber, onion and cherry tomatoes.
After the chickpeas are boiled let them come to the room temperature.
Now in a large bowl put the chickpeas and all the other cut ingredients and mix well.
Add the coriander and mint leaves.Keep aside.
For dressing put the olive oil in a small bowl, add black pepper, lemon juice and salt.
Stir and mix well.
Add the dressing in the salad.
Mix again properly and put it in the refrigerator.
Serve cool.
