A healthy weeknight meal with only few ingredients…..chicken and vegetables, just make a stir fry sauce and your meal is ready. Add vegetables of your choice, skip chicken if you are veg and add tofu or paneer( Indian cottage cheese). Asian dishes are easy to make. I often make noodles with stir fried chill veg. They are quick and easy meals. I love this recipe. Impressed my husband's colleague and his family. Important thing is I can prepare the whole thing in half an hour. Lets start with the recipe.
Serves 2
Ingredients
Boneless chicken 250gms
Mixed vegetables( green bell pepper, carrot, beans, red bell pepper) chopped 1 cup
Onion 1( chopped)
Garlic 3 to 4 cloves
Green chilli 3 to 4 slit
Soy sauce 1 teaspoon
Red chilli sauce 1 teaspoon
Cornstarch 1 teaspoon
Vegetable oil 1 tablespoon
Chicken broth 1/2 cup
Directions
Heat oil in a wok.
Add chicken and garlic and fry for 10 mins.
Now add onion, sauté and add all the vegetables, salt and stir fry for 10 minutes
Add the chicken broth.
In a small bowl mix soy sauce, red chill sauce,water and cornstarch.
Stir into vegetables and cook till the chicken is tender.
Serve hot with veg fried rice or plain rice.
