I just love egg salad: the creaminess of the eggs, the crunchy veges and the juicy tomatoes, its just so perfect. I normally eat egg salad when I want to eat something very simple, comfort food. When I am lazy I just make some egg salad, mix some mayo and Egg salad sandwich is ready. Super easy.Since the hero of this dish is Egg so make sure this recipe assumes that you have hard boiled eggs on hand. Its upto you how you choose to cut them. Add some baby boiled potato and beans if you want. Enjoy

Egg salad with Cucumber, Cherry Tomatoes and Red Onion

Preparation time 15minutes
Cooking time 10 minutes

I love eggs so much, that very often instead of opting for preparing curry with Egg, I simply boil a egg and have with Hot rice with little bit of Mustard oil and salt. Ohh..its divine. Do try that. However, today I am going to present something with Egg, which is healthier and one can have it just for the sake of the egg, in case you are not having Rice to accompany.

Ingredients:-

Egg (boiled) 2
Cucumber 1 medium size (sliced lengthwise)
Onion 1 (sliced lengthwise)
Cherry tomatoes 5 to 6
Fresh coriander leaves
Fresh lime juice 1 tablespoon
Black pepper 1/2 teaspoon
Olive oil 1 teaspoon
Salt to taste

Method:-
In a small bowl mix lemon juice,black pepper,olive oil and salt together. Keep aside.

Cut the vegetables. In a large mixing bowl mix the vegetables and lemon salt mixture. 

Before serving cut the eggs lengthwise, add little coriander leaves, Garnish.

Serve.
