This is a healthy recipe for those who want to spend less time in kitchen but wants a quick and easy salad recipe. Moong sprouts is not only very easy to make but it is tasty and healthy. You can use readymade sprouts but it is advisable to use homemade sprouts. It is very easy to make. If you learn to sprout beans, you can store it and keep in the refrigerator for few days and can make different types of dishes. First lets start how to sprout moong beans.

Take a handful of moong beans and wash them properly. In a bowl take the beans and add water to soak the beans.

Soak overnight. Next day moong beans will swell. Discard all the water. Now put the drained beans in a plate and leave for 2 days. 

After 2 days sprouts will come out from beans. Once the beans are sprouted we are ready for the salad. 


1/2 cup Moong Sprouts or Green Gram
1/3 cup Black Chana or Bengal Gram Whole (boiled)
1 medium size Carrot
1 medium size Zucchini
1 medium size Tomato
1/2 cup of green,yellow, red Capsicum
1 medium size Onion
1 teaspoon Lemon juice
Salt to taste
1 tablespoon extra virgin olive oil
Mint leaves for garnishing.

You can use sunflower seeds, sesame seeds, chopped almonds to add crunch in your salad.


First wash all the vegetables properly. 
Then peel and chop the vegetables( Onion, Tomato, Zucchini, Carrot and Bell peppers).
In a small bowl pour olive oil, salt and black pepper. 
Whisk and pour the dressing in the bowl containing the cut veges. 
Toss, add mint leaves and  serve.
If adding seeds and nuts, then dry roast the nuts and sprinkle just before serving.
