Mushroom Fried rice
This is an Indo chinese dish which is tasty and simple to make. Specially if you have some leftover rice this dish can be easily prepared. It is very good for lunch or tiffin. You can add celery or spring onion or any other vegetable of your choice.

Serves 2 to 3
Preparation time 20 mins
Cooking time 10 mins


Basmati rice 2 cups
White button mushrooms 250 gms
Garlic cloves 3 to 4 -finely chopped
Onion 1 medium size
Green, Yellow and Red Bell Pepper 1/3 cup- finely chopped
Soy sauce 1 teaspoon
Oil 3 tablespoon
Black pepper 1/2 teaspoon
Salt to taste


Rinse the rice 3 to 4 times. Then cook the rice in 6 cups of water.
Add few drops of oil and salt to the rice. The rice should be cooked such that it does not stick to each other i.e. al dente.Rice should not be mushy.
Drain the rice and keep aside. Heat oil in a heavy bottomed wok, add onion and garlic, stir fry for 3 minutes on medium flame.  
Add the mushrooms and stir fry for 6 minutes till the mushrooms begin to get brown.
Now add the bell peppers and fry for 1 minute. 
Next add rice, soya sauce, salt and pepper. 
Stir fry the rice for 3 to 4 minutes. 
Garnish with spring onion and serve with hot sweet and sour vegetables or just like that with sauce.
