Roasted Eggplant

Baingan Bharta : This is a simple Punjabi recipe with very little spices. The smoky flavor of the baingan or eggplant comes out distinctly in this simple eggplant recipe. 

For smoky flavor roast the eggplant in fire and not in oven. 

Serves-2 to 3
Preparation time 20mins
Cooking time 10 mins


1 large eggplant
1 medium size onion finely chopped
1 or 2 tomatoes finely chopped
5 garlic cloves finely chopped
2 green chilies chopped
2 tablespoon oil
1 teaspoon red chilli powder
Salt to taste
1 chopped tomato for garnishing
Coriander leaves for garnishing


Wash the eggplant in water. 
Pat dry and apply oil all over the eggplant. 
Now keep the eggplant on the flame turning 2 to 3 minutes , so that it is cooked evenly.  Roast the eggplant till it is completely cooked and becomes tender. 
When it is cooked remove from heat and immerse it in cold water. 
Now peel the skin from the roasted eggplant. Chop it finely or you can mash it also. 
Then in a heavy bottom pan put oil. Add the chopped onions and fry till translucent. 
Now add garlic  and chillies, fry and add the tomatoes. Mix it well. 
When the masala is cooked properly, add red chilly powder and mix well. 
Add the  eggplant and sautĂ© for 5 to 6 minutes and add salt. 
Cook for sometime and put off the flame . 
Garnish with coriander leaves and chopped tomato.

Take with Hot Rice or Chapati.
